Roasted Zucchini

A simple, succulent chicken dish you can make any night of the week! Ingredients:   2 Zucchini’s, ends cut off & cut into 4ths lengthwise 1-2 Tbsp. Cilantro & Roasted Onion Olive Oil (or your choice) Dash Freshly Ground Black Pepper Dash Maldon Sea Salt Flakes 1 Clove Garlic, roughly chopped Directions: Preheat oven to 400 degrees F. In a bowl, coat Zucchini with Olive Oil, add the garlic, pepper and sea salt and toss. Lay on a baking sheet lined with parchment paper. Bake for 15 minutes or until zucchini is tender. Melon Carpaccio with Blood Orange Olive Oil & Fresh Tarragon

Ingredients: 1 small ripe melon 1 1/2 tsp. lime juice 3 tbsps Blood Orange Olive Oil 2 Tbl fresh tarragon leaves    Directions: Cut both ends off the melon and then skin it by slicing the skin off with a sharp knife from the top to the bottom. Cut the melon in half and seed it. Using a mandoline, slice the melon halves in 1/8” slices. Arrange the slices onto four plates, overlapping them to form a long row. Crispy Cauliflower

Ingredients: One head of fresh cauliflower, florets removed and cut into bite-sized pieces 3 cups High Phenol Extra Virgin Olive Oil( your choice) 1 cup rice flour Sea salt and pepper to taste 1 liter soda water Directions: In a large pot, bring 5 cups of salted water to a boil. Once boiling, add cauliflower florets and blanch for 45 seconds. Remove florets from boiling water and immediately place into an ice bath to stop cooking. Tzatziki Dip with Chipotle Olive Oil

Greek Tzatziki dip is easy to make homemade with fresh ingredients, and it can be used in a wide range of dishes!  Ingredients: 2 Cups Full-Fat Greek Yogurt 4 Cloves garlic, peeled and minced 1 Large Cucumber, seeded and grated (1 cup) 1 Tbsp. Fresh Dill, chopped 1-2 Tbsps. Sicilian Lemon White Balsamic 2-4 Tbsps. Chipotle Olive Oil, extra for drizzling Pepper & Sea Salt to taste   Directions: Stir all ingredients until well combined. Taste and adjust seasoning if needed. Drizzle with extra Chipotle Olive Oil and serve!
