Roasted Zucchini

A simple, succulent chicken dish you can make any night of the week!




Zucchini’s, ends cut off & cut into 4ths lengthwise

1-2 Tbsp.

Cilantro & Roasted Onion Olive Oil (or your choice)


Freshly Ground Black Pepper


Maldon Sea Salt Flakes

1 Clove

Garlic, roughly chopped


Preheat oven to 400 degrees F. In a bowl, coat Zucchini with Olive Oil, add the garlic, pepper and sea salt and toss. Lay on a baking sheet lined with parchment paper.

Bake for 15 minutes or until zucchini is tender. Sprinkle with cheese (optional) and enjoy!
