This is a wonderfully balanced, incredibly fresh-tasting, and robust oil made from a unique olive variety grown in Peru.  Grassy and herbaceous aromas are initially experienced, followed by notes of green banana, green apple, hints of mint, and green tea, making this oil incredibly complex. It is strongly fruity, quite bitter, and equally pungent.  The flavour rounds into a warming spicy finish with notes of cinnamon, black pepper, and chili pepper, with an intensity that lingers beautifully.
