A medium intensity oil with low bitterness, strong pungency, and moderate fruitiness.  It is quite complex, with several ripe, fruity flavours of butter, nuttiness, and apple - plus some bright, spicy, herbaceous flavours of mint, cinnamon, and chili pepper.  It is a very nicely balanced and relatively fresh tasting olive oil.
