Cinnamon-Pear Balsamic Roasted Sweet Potatoes
Ingredients:

Medium Sweet Potatoes, peeled and cut lengthwise into 8 wedges
1/3 cup
Cinnamon Pear Dark Balsamic Vinegar
2 Tbsp.
Butter Olive Oil
¾ tsp.
Sea Salt
Directions:
Preheat the oven to 400 degrees Fahrenheit
Thoroughly whisk together the Butter Olive Oil and Cinnamon Pear Dark Balsamic in a large bowl. Add the sweet potato wedges and toss in the oil/vin mixture. Spread the wedges out evenly on a parchment lined baking sheet and sprinkle with sea salt. Roast for 35-40 minutes until wedges are caramelized.

Popcorn & Olive Oil
Ingredients:
½ cup
Popcorn kernels
3 tbsp
Your favorite flavoured or unflavoured olive oil (see below for most popular)
Sprinkle of sea salt (optional)
Directions:
Place popcorn kernels in air popper and pop according to manufacturer’s directions.
Transfer popcorn to an over-sized bowl. Drizzle over olive oil, 1 tablespoon at a time, and toss to coat. Continue adding olive oil until you achieve your desired coverage. Sprinkle with sea salt and toss until evenly coated.

Grilled Lobster Tails with Butter Olive Oil
Ingredients: 2 (10 ounce) lobster tails 1/2 cup Butter Olive Oil (or your choice) 1 tbsp of lemon juice 1 tsp paprika 1 clove of garlic, chopped Salt & Pepper to taste Directions: Preheat grill to high heat Squeeze lemon juice into a small bowl, and whisk in olive oil. This recipe is a "Parkerhouse Inn" favorite. I have substituted butter infused olive oil for the butter, to cut back on the saturated fats, as this is a rich dish.
