Caprese Avacado Toast with Strawberry Balsamic

 This recipe is fast and easy to create and makes for a healthy afternoon snack.

  Ingredients:

2 ripe avocadoes, pits removed

2 tsps. fresh lime juice

4 slices of whole grain bread, toasted

4 ounces fresh mozzarella, cut into small pieces

1 cup grape tomatoes, cut in half

1/4 cup basil leaves, roughly chopped

1 tbsp. Strawberry Balsamic, for drizzling

Salt & Pepper to taste

 

  Directions:

Scoop out the avocado from the outer shell into a small bowl. Add the fresh lime juice, salt and pepper. Mash with a fork or a potato masher until desired consistency.

Spread the avocado mixture onto the toast, then top with tomatoes, mozzarella and basil. Drizzle the Strawberry Balsamic overtop.
