Smashed Chickpea Salad



15 ounce

Can chickpeas , rinsed and drained

2 tbsps

Pitted and thinly sliced, Castlevetrano Olives

1 tbps

Red onion, finely chopped

1 tbsp

Chopped Cilantro, or Parsley


Zest and juice of half a lemon


Sea Salt & black Pepper


Few splashes of LG Extra Virgin Olive Oil


    1. Mix everything but the olive oil in a small to midsize bowl.
    2. Very lightly smash the chickpea mixture with the back of a fork or a potato masher. Add the splashes of olive oil, mix it lightly and enjoy.

    You can eat this with some crackers or use as a spread for sandwich's & wraps.
