Pulled Pork Meat Pie

 

Pie Crust:

2 1/2 cups of all-purpose flour

1 teaspoon salt 

1 cup butter, chilled an diced

6 to 8 tablespoons of ice water

Liquid Gold Butter extra virgin olive oil for brushing

In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in the water a tablespoon at a time until mixture forms into a ball. Wrap in plastic and refrigerate for 4 hours or overnight. Roll dough out to a 1 and a half inch thickness. Press the dough evenly into the bottom and sides of individual ramekins, brushing them with Butter olive oil and cutting into circular pieces using your ramekins so they fit perfectly on top. Place on a baking sheet and brush the circular pieces with Butter olive oil. Bake both ramekins and tops at 350 degrees for 15 minutes or until golden brown.

Pulled Pork:

5-6 pounds of boneless country style pork ribs

1/4 dry rub (see below for dry rub recipe)

1/2 cup of mixed Liquid Gold Herbs de Provence and Basil Olive Oils

Homemade rum barbeque sauce (see below for recipe)

Place the pork ribs into a large slow cooker (5 quarts or over recommended). Sprinkle the ribs with your homemade rub turning the ribs to ensure that they get coated evenly. Add your mixture of Olive Oils onto the ribs.

Cover and cook on high for approximately 5 to 6 hours. The meat will be done when it can be easily pulled apart and has reached an internal temperature of 190 degrees Fahrenheit. Remove from slow cooker and let rest until cool.

Shred your ribs and gradually mix into a bowl with the barbeque sauce. Fill your baked pastry with the mixture and place the top of pie back on. Garnish with a basil leaf and drizzle of Liquid Gold Fig Balsamic.

 

Homemade Pulled Pork Dry Rub:

1/4 cup paprika

2 tablespoons salt

2 tablespoons ground black pepper

1 tablespoon ground basil

1 tablespoon ground thyme

Place all ingredients into a jar, tightly close the lid and shake to mix.

Homemade Rum BBQ Sauce:

1 cup brown sugar

1/2 cup Liquid Gold Chipotle Olive Oil

1/2 cup dark rum

1/4 cup tomato paste

1/4 cup Liquid Gold Chocolate Balsamic Vinegar

2 cloves crushed garlic

1 teaspoon ground dry mustard

1 teaspoon ground cumin

2 tablespoons paprika

black pepper to taste

Place all ingredients together into a mixing bowl and stir until everything is mixed evenly.
