This creamy macaroni & cheese recipe is fast, basic and kid-friendly with plenty of room to add your own creative touches. So much better than boxed or frozen versions!
2 Tablespoons mild to medium Liquid Gold Extra Virgin Olive Oil (evoo)
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups milk
1.5 cups grated sharp cheddar cheese
8+ oz of small, cooked pasta
In saucepan add; evoo, flour, salt, pepper. Mix together over low heat. Add milk, raise heat to medium. Whisk and stir for about 10 min or until thickened. Remove from heat and add cheese, stirring until melted. Finally, add cooked pasta and serve.
For baked macaroni & cheese, pour the mixture into a casserole and top with breadcrumbs. Bake at 375 for 25 minutes.
To jazz up this recipe add in some crushed red pepper, veggies, meats, multiple cheeses and other herbs/spices…the possibilities are endless.
