Lime Muffins


 2 cups flour

1 cup sugar

2 tsp baking powder

1/2 tsp salt

1 egg

1/4 cup milk

1/4 cup Liquid Gold Persian Lime Evoo

3 Tbsp lime juice

1 1/2 tsp grated lime peel

(I recommend using all the zest and juice of 3 or 4 limes)


Mix first four dry ingredients in one bowl.  In another bowl beat eggs, milk, oil, lime juice and peel.  Stir into dry ingredients.  Bake at 400 degrees for 18 to 20 minutes.
