Easy Quinoa Salad with Roasted Sesame Vinaigette

  Ingredients: 4 cups shredded red cabbage 2 cups cooked quinoa 2 cups shredded carrots 2/3 cup thinly sliced green onion 2 tbsps. sesame seeds 1 tsp. Japanese Roasted Sesame Oil 1/3 cup Mild Extra Virgin Olive Oil 3 tbsps. Honey Ginger Balsamic Vinegar Freshly ground black pepper   Directions: In a small bowl, whisk together Olive Oil, Sesame oil, Honey Ginger Balsamic and pepper. Combine all other ingredients into a large salad bowl, drizzle the dressing overtop and toss thoroughly until everything is well coated.

Caprese Avacado Toast with Strawberry Balsamic

 This recipe is fast and easy to create and makes for a healthy afternoon snack.   Ingredients: 2 ripe avocadoes, pits removed 2 tsps. fresh lime juice 4 slices of whole grain bread, toasted 4 ounces fresh mozzarella, cut into small pieces 1 cup grape tomatoes, cut in half 1/4 cup basil leaves, roughly chopped 1 tbsp. Roasted Eggplant and Balsamic Shakshuka

  Shakshuka is a Middle Eastern dish that is what we would call .tomato stew with eggs. Balsamic Grilled Mushroom Skewers

    Grilled mushrooms marinated in Fig Balsamic make a simple and tasty backyard  BBQ dish!   Ingredients: 2 lbs button mushrooms, sliced 1/4 thick 3 cloves garlic, chopped 2 tbsp. Italian Fig Balsamic Salt & Pepper to taste Skewers   Directions: Marinate the mushrooms in the balsamic, garlic, salt and pepper for a half an hour. Preheat the grill to medium heat. Skewer the mushrooms and grill until tender and slightly charred, about 2-3 minutes per side.
