Smashed Chickpea Salad

    Ingredients:   15 ounce Can chickpeas , rinsed and drained 2 tbsps Pitted and thinly sliced, Castlevetrano Olives 1 tbps Red onion, finely chopped 1 tbsp Chopped Cilantro, or Parsley   Zest and juice of half a lemon   Sea Salt & black Pepper   Few splashes of LG Extra Virgin Olive Oil     Directions: Mix everything but the olive oil in a small to midsize bowl. Roasted Broccoli with Meyer Lemon Olive Oil

 Ingredients: 2 Broccoli crowns, heads halved 3 Cloves garlic, peeled and sliced 3-4 tbsp LG Meyer Lemon Olive Oil 1 tsp. Paprika   Sea Salt & black Pepper  Directions: Preheat oven to 425° F. Place the prepared broccoli and garlic slices on a baking pan. Drizzle the olive oil over the broccoli. Toss the broccoli and garlic to coat evenly with the olive oil. Slow Cooker Chicken Thighs

       Ingredients:   1-2 Tbsp. Your Favorite Flavored Olive Oil (I’m using Wild Rosemary) 10 Cloves garlic, peeled 5-10 Chicken Thighs, bone-in 2 Onions, sliced 2 tsps. Paprika   Sea Salt & black Pepper     Directions: Place onion slices on the bottom of the slow cooker, then, in a large bowl, toss the chicken with the oil, salt, paprika, pepper and all of the garlic cloves.
