Roasted Zucchini with Fall Flavours
Ingredients: 3 tbsp. LG Balsamic Vinegar. Flavours we recommend: Pomegranate, Red Apple, Traditional, & Cinnamon Pear 1 tsp sea salt 1/2 tsp freshly crushed pepper 3 cloves garlic, minced 1.5 tsp dried basil 2.5 tbsp. LG High Polyphenol Extra Virgin Olive Oil 1 small white onion, chopped finely 1 of each: zucchini, eggplant, sweet potato, cut into rounds Directions: Preheat oven to 450F. After cutting all of the veggies into round slices place them in a bowl and set them aside. Whisk together the rest of the ingredients in a small bowl until combined. Cilantro Mint Chutney
2 bunches Cilantro, chopped2 bunches Fresh Mint leaves, chopped1 Jalapeno, chopped2 tbsp. LG Mango Whole Fruit White Balsamic1/2 tsp. salt1 teaspoon cumin1/4 cup LG Cilantro & Red Onion Infused Olive Oil
Directions:
Toss all ingredients together until well combined.
Serve with our Vegan Pakoras or use as spread over a baguette.

Gluten-Free Cauliflower Fritters
Ingredients: 1 1/2 cups Cauliflower, pack tightly 1 Tbsp. Cilantro, chopped 3-5 Tbsp. LG Cilantro & Red Onion Infused Olive Oil 1/4 tsp. Garlic salt 1/2 cup Breadcrumbs, gluten free 2 Eggs Dash Chili pepper flakes Dash Salt and Pepper to taste Directions: Cut a small head of cauliflower into pieces and add to a food processor. Process until it forms a thin cauliflower rice. Measure out 2 1/2 cups and add to a large mixing bowl. Ingredients: 12 oz button mushrooms 1/4 cup Liquid Gold Pedro Ximenez Sherry Vinegar 1/4 cup mushroom broth 1/4 cup any Liquid Gold High Polyphenol Extra Virgin Olive Oil or Garlic Infused Olive Oil 2 tablespoons Spice Lab French Onion & Garlic Spice Blend Bamboo skewers, to serve the mushrooms (recommended, but optional) Directions: Mix all ingredients, except mushrooms in a bowl.
