Ayvalik is Turkey’s most widely grown olive. It creates a medium-mild oil from early harvested fruit. A nice floral and fresh, herbaceous aroma is balanced by mild bitterness, strong fruitiness, and sharp pungency. The ripe flavors are both tropical and citrus. The green flavors are herbs, grass, artichoke, green apple, mint, cinnamon, and black pepper.
