Olive Oil Mayonnaise

  Ingredients 1 Fresh egg yolk 1 T white balsamic vinegar 1 t sugar 1/2 t salt 1/2 Dry Mustard 1/4 t paprika 1 c. Arbequina olive oil Method With a mixer, beat the yolks, vinegar, sugar, salt and spices briefly.  While beating on high speed, add the oil in very small additions (3ml) being sure to fully incorporate with each addition.  After approximately 1/4 of the oil has been added, it can be incorporated a little more quickly, until all of the oil has been added.  Properly stored in the refrigerator, the product will last 5-7 days. Bill's Open Faced Tuscan Grilled Cheese

    Ingredients 4 slices good grainy bread 1 avocado 1 tomato I Vidalia or sweet onion  McLaren's Sharp Cheddar 1. Brush bread with Liquid Gold Tuscan Herb Extra Virgin Olive Oil.  2. Toast in toaster oven. (Or toast in toaster, then brush with Tuscan Herb) 3. Put a generous amount of McLaren's Imperial sharp cheddar cheese on the toast 4. Top with slices of fresh avocado,tomato and onion 5. Broil until lightly browned Enjoy!!!

Basil Pesto

1 or 2 garlic cloves 1/2 teaspoon salt 3 tablespoons pine nuts 3 cups loosely packed basil leaves, stripped from stems 1/2 cup  Liquid Gold extra virgin olive oil 1/2 cup freshly grated Parmesan cheese Chop garlic, salt, and pine nuts in a blender or food processor until finely chopped. Add basil and olive oil; pureé until smooth. Add the cheese and process just to combine; taste and adjust seasonings. Serve with pasta or grilled meats or vegetables.

Cilantro and Sun-Dried Tomato Pesto

1 c cilantro, chopped (can include the stems, which have a lot of flavor) ½ c sun-dried tomatoes (dry-packed, not in oil) 1/3 c Liquid Gold medium to intense extra virgin olive oil 1 tbs. diced green chilies from a can or fresh jalapeno, if you like spicy 1 clove garlic, minced 1 tsp. brown sugar (optional) salt and pepper to taste Soak sun-dried tomatoes in the olive oil for 2 hours or overnight, if possible In a blender or food processor, process the cilantro, soaked tomatoes and their oil, chiles, garlic, and brown sugar.  Process until the mixture is...
