Liquid Gold's White Balsamic Mojito

Ingredients: 5 fresh strawberries 2 shots of your favorite Rum 3/4 shot of freshly squeezed lime juice 1/4 shot of Liquid Gold Lemongrass Mint White Balsamic (or your favorite) 1/2 shot of simple syrup (2 sugar to 1 water) 12 fresh mint leaves Club soda or sparkling water to top up with Ice   Directions: Muddle strawberries in the base of a cocktail shaker Add the rest of ingredients, shake with ice and strain into chilled glass. Garnish with mint leaves (optional)

Roasted Tomatoes

12 Roma or Plum Tomatoes Liquid Gold UP Extra Virgin Olive Oil, Sea Salt and Pepper Prepare tomatoes by washing, cutting off tops then in half Preheat oven to 180 F Place cut tomatoes in a bowl, and toss with Olive Oil, Sea Salt and Pepper to coat Place seed side up on a baking sheet, and roast for 6-7 hours The tomatoes will shrink to what looks like a plump sun dried tomato. They should still be moist.  The flavor is well worth the wait. Lovely in dressings, sandwiches, Bruschetta, on pizza or in pasta.

Sofrito

Sofrito is a popular base sauce readily used in Spanish cuisine. This is a great recipe you can make ahead freeze. (For perfect portions, freeze sofrito in ice cube trays, then transfer to a zip-top bag to store) Ingredients: 2 pounds plum tomatoes 2 red bell peppers 2 medium yellow onions 5 garlic cloves, smashed and peeled 1 bunch cilantro, large stems trimmed 1/2 cup  Robust Intensity UP extra-virgin olive oil Directions: Coarsely chop tomatoes, peppers, and onions. Olive Oil Refrigerator Pickles

                                                                    24 pickling cucumbers 1/2 course salt 2 small onions, thinly sliced 4 c cider vinegar 1/2c med robust LG EVOO 1c mustard seeds (white if available) 1 T celery seeds 1. Wash the cucumbers, and slice into 1/8inch circles. Place in a large bowl, sprinkle with salt, and allow to sit for 3 hours. 2. Drain cucumbers well, and pat dry with paper towel or clean tea towel.
