Carrot Salad with Persian Lime Oil & Green Apple Balsamic

This an easy, fast side dish for any night of the week. Ingredients: 4 Carrots, peeled and finely grated 2-3 tbsps. LG Persian Lime Olive Oil 11/2 tbsps. LG Granny Smith White Balsamic freshly ground pepper & sea salt   Directions: In a bowl toss the grated carrots with the olive oil, balsamic, sea salt & black pepper. Serve as a starter or side dish.

Chipotle & Lime Chicken

    Ingredients: 1/4 cup Chipotle Olive Oil 1/4 cup Lime juice 4 Chicken Breasts (bone-in) Sea Salt & Black Pepper     Directions: Combine Chipotle oil & Lime Juice together. Place chicken breasts in a dish and cover with oil & lime mixture. Marinade in the fridge for at least 2 hours. Preheat oven to 375 degrees F. Remove chicken breasts from marinade and place in an oven safe baking dish. Sprinkle with sea salt & pepper. Bake until meat is no longer pink and juices run clear. 45-60 minutes. Lemon Lime Tarts with Balsamic Strawberries

6 eggs 1 ½ cups sugar ¾ cup lemon juice 1 Tbsp lemon Zest 1-2 Tbsp Liquid Gold Persian Lime Olive Oil 24 cooked mini tart shells, or 12 medium or one large tart 2 cup slices fresh strawberries 2 Tbsp Liquid Gold Golden Pineapple White Balsamic Vinegar   In a medium saucepan, combine first 4 ingredients, and whisk together until smooth. Place pan over medium heat and cook, stirring constantly, until mixture comes to a boil, then remove from heat. Stir in Persian Lime Olive Oil. Allow mixture to cool completely. Quacamole Gazpacho

1 ½ - 2 pounds fresh tomatoes, cored, seeded and roughly chopped 1 cucumber, peeled and seeded 2 clove of garlic, peeled, roughly chopped 1 medium avocado, add 1 more for creamier soup 2 heaping tablespoons red onion, chopped 2 tablespoons fresh cilantro, thick stems removed (optional) Juice and zest from 1 lime 1 Tbs Liquid Gold Sherry Reserva Wine Vinegar 1 tsp sea salt, plus extra to taste 1 tsp Cayenne powder (optional) ½ c Liquid Gold Medium to Robust Extra Virgin Olive Oil   Puree all the ingredients in a blender or food processor.
