Garlic Truffle Cauliflower Puree
You can use this simple puree on pork, beef, chicken or use it as a side dish. For a quick appetizer, add this puree to crostini's. 1/2 head of cauliflower 3 Tbs of Liquid Gold Garlic Olive Oil 1/2 tsp of Liquid Gold White Truffle Oil 1 head of Weedy Gardens garlic 1/4 fine diced red onion 3 sprigs of thyme chopped 3 sprigs of oregano chopped 3 Tbs fine diced red pepper Maldon Sea Salt to taste Boil Cauliflower until tender in salted water with 1 Tbs of Garlic Olive Oil and whole head of garlic. Goat Cheese Pesto
Ingredients
2 cups packed fresh basil leaves
½ cup Liquid Gold Garlic Extra Virgin Olive Oil
½ cup freshly grated Parmesan cheese
8 oz. fresh chevre (goat cheese)
½ teaspoon salt
Directions
Put the basil, garlic olive oil, grated Parmesan, goat cheese and
salt in a food processor or blender and process to a smooth paste. Use
immediately as a dip, spread or served over hot pasta.
Makes 3½ cups.

Ingredients (as always, ingredients can be adjusted to taste) 1 egg yolk (optional) 1 tsp Dijon Mustard (optional) 1 tsp capers 1 plump clove of garlic smashed 6 drops Worcestershire 2 drops Tabasco 1 good tsp anchovy paste 2 T Liquid Gold Sicilian Lemon White Balsamic 1 cup Liquid Gold Garlic Olive Oil or Med-Robust Grassy Pure Cultivar 1/4 c fresh Parmesan or Asiago cheese (+ handful for garnish) fresh ground pepper Process first 7 ingredients in a food processor.
