Thai Street Omelet

    Ingredients:

Eggs

2 tbsps.

Minced Pork (or minced chicken)

¾ tsp.

Soy sauce

1 tbsp.

Summer Kitchen Piri Piri Sauce

 

About ½ cup LG Robust EVOO for frying

 

Tomato sauce (optional)

 

Fresh steamed rice

    Directions:

Add the oil to a sauce pan and place over medium heat. While your oil is heating up prepare the eggs.

Crack eggs into a mixing bowl. Add about 2 tablespoons of the minced meat to the eggs along with the Piri Piri Sauce and soy sauce. Whisk and beat until you see air bubbles. Add the beaten mixture to the frying pan. After 30 seconds flip the omelet and cook the other side for an additional 30 seconds. Cook until nice and golden yellow.

Serve over rice and enjoy!
